Roasted Aubergines, Asparagus and Tofu in vinegar + balsamic glaze marinade!

I'm loving my holiday, today I got up at 12 in the afternoon. Reading books, enjoying the sunshine all day! My plans to go swimming have been abandoned again. Although I might have to go to uni to print our boarding passes for tomorrow. 

You probably know by now that I'm crazy about asparagus and I could eat it every day. Another asparagus recipe:


Ingredients:
  • Asparagus
  • Aubergine
  • Tofu
  • Vinegar
  • Olive Oil
  • Balsamic glaze
  • Oregano
  • Garlic
  • Salt and pepper

  1. Cut aubergine into slices, sprinkle with salt and leave for 30 mins. It should give out juices. Rinse it and dry it with paper towel.
  2. Drain the tofu and press it so that the excess liquid comes out.
  3. Prepare the marinade. Mix half a glass of olive oil with 1/3 of glass of vinegar and 2 spoons of balsamic glaze. Add chopped up garlic and oregano. Mix it well and use it to marinate the tofu and aubergine slices for at least half an hour.
  4. Grill the mix for 25-30 mins, adding the asparagus 15 mins into the grilling process.

Baby button mushrooms, asparagus, perfect mashed potatoes and salad!

So I thought I would have more time once I finish my exams... However I spent the last few days in London, where I wasn't really able to cook (since my mum rules in the kitchen). The only thing I've made was a mango, pomegranate salad with feta cheese (will try to take a photo next time I make it). 

Anyway, London was very nice as usually. Me and mum went to the the Sanctuary Spa in Covent Garden, it was really good despite the nasty reviews they got on the tripadvisor website.

Talking about trips, we are going to Malta on Thursday. I'm really excited, can't wait to have truly sunny, warm weather and to taste some new dishes. I will have to do a little research on that!

Now, let's get to the point - yesterday's dinner (for the first time I managed to obtain absolutely perfect mashed potatoes!):


Ingredients
  • bunch of thick asparagus,
  • baby button mushrooms
  • potatoes
  • tomatoes
  • cooked beetroots
  • rocket salad
  • Greek yoghurt
  • Chinese stir fry sauce with ginger and garlic
  • salt and pepper
  1. The perfect mash: boil the potatoes 25-30 mins with a bit of salt, mash them with a spoon of butter, 3 spoons of milk, and a spoon of Greek yoghurt (I only used it as I ran out of cream).
  2. Asparagus: boiled for 4-5 mins.
  3. Baby button mushrooms: fried with butter, added the Chinese sauce in the last minute of frying.
  4. Salad: beetroot, tomatoes, rocket salad with Greek yoghurt and pepper.
Pretty effortless dinner in the end :-)

Vegetarian Kiev, mushroom, beans, courgettes and potatoes!

Most of my final uni exams are now out of the way. Only one left - Russian exam on Thursday, hence I should soon have more time to update my blog and post something more interesting than just pictures of food!

Another vegetarian dinner idea for you:


Ingredients:

  • green beans
  • courgette
  • potatoes
  • Portobello mushroom
  • vegetarian kiev
  • garlic
  • onion
  • parsley
  • olive oil
  • butter
  • salt and pepper
  1. Put the potatoes to boil for 20-25 mins. Then drain and add butter and parsley.
  2. Portobello mushroom. Remove the stalk, chop it into little cubes. Add chopped garlic and onion. Mix together and fry with olive oil. Fry the mushroom separately on both sides season with salt and pepper. 
  3. Stuff the mushrooms and bake for 5-8 mins.
  4. Courgettes and beans can be steamed or boiled. If boiling - 5 mins is usually enough.
  5. Vegetarian Kiev - found in any supermarket. I get mine from Tesco's ;-) Just bake it and enjoy!

Creamy broccoli, courgette, and beans pasta!


Ingredients:

  • broccoli
  • green beans
  • courgette
  • penne pasta
  • double cream
  • butter
  • salt and pepper
